Here’s another one for the wonderful recipe box swap at I have to say… These are great, but a little time consuming if you roll them out. You can shape them into a roll and then slice to save a little time though.
From Maida Haetter’s Cookies. I got this book for my nineteenth birthday and I adore it. I reccomend it to anyone.
Wild Honey and Ginger Cookies
2 1/2 c. all purpose flour
1 1/2 tsp. baking soda
1/4 tsp salt
1 T. powdered ginger
8 oz. butter cut into small pieces (Do NOT use margarine, the dough gets waaaay sticky)
1 c. honey (If you can find something spicy, that’s the best)
Sift together flour, soda, salt, and ginger in a large bowl and set aside. In a small pan, heat honey and butter, stirring occasionally, to a low boil.
Pour hot honey mixture over dry ingredients all at once and mix until dry ingredients are absorbed and until a stiff dough forms. It’s good to have an upright mixer for this, but you can do it by hand.
Wrap the dough in a piece of oiled foil and tuck it in the fridge for four hours or overnight.
Preheat your oven to 350 F.
Okay, now work with just half at a time, put the dough on a well floured surface and flour your rolling pin, too. The dough will be very stiff so whack it with the pin a bit to loosen it up and roll it out to 1/4 inch thick. And cut it how you please. I like to cut it into squares to be a tiny bit different. Place 2 inches apart on a parchment lined cookie sheet. Bake about 12 minutes, until well colored.
They have to be stored airtight or they get soft. You can however recrisp them in a 325 F oven for5 minutes or so.
I don’t have any photos of these, so here’s a few that I’ll call prepping for baking.

This sounds different and good. I've never made a cookie with this much honey in them. I'll have to give them a try.

These sound great, and different. My kids would love to see some real honeycombs! Might just have to show them these pictures.
