The cold has continued and so has the baking. Here’s my new favourite fast oatmeal cookie recipe. It’s from the book Maida Heatter’s Cookies that my godmother gave me when I moved out from home many years ago. Okay, seven. The pinwheels on the cover are easy and awesome, too. They make a great gift because they’re so good looking people think you spent a ton of time on them.

Oatmeal Snickerdoodles.
2 c. all purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
8 oz. butter
1 tsp. vanilla
3/4 c. sugar
3/4 c. packed light brown sugar
2 eggs
1 1/2 c. old fashioned oats
Sift together dry ingredients. Cream butter, sugars and vanilla. Add eggs one at a time. Gradually add dry ingredients. Stir in Oats. Drop by teaspoonfuls onto cookie sheets. Sprinkle with cinnamon and sugar. Bake at 400 degrees F 10-12 minutes.
Try to wait long enough to not burn the roof of your mouth.
